- Prepare the sauce by whisking cornstarch and cold water until smooth. Then add soy sauce, rice wine vinegar, sugar, and grated ginger. Set aside.
- Slice the vegetables: chop broccoli, carrots, mushrooms, green beans, and onion into uniform pieces.
- Cook the potstickers in a hot skillet with sesame oil and olive oil for 3-4 minutes until golden brown. Add water, cover, and steam for another 3-4 minutes.
- Remove potstickers. In the same skillet, sauté onions and mushrooms for 3-4 minutes until tender, then add broccoli, green beans, and carrots, cooking for another 3-4 minutes.
- Return the potstickers to the skillet, drizzle with sauce, and gently toss everything. Cook for an additional 2-3 minutes until the sauce is bubbling.
