Method
 

Preparation Steps
  1. In a medium bowl, whisk together fresh ginger, minced garlic, soy sauces, coconut milk, brown sugar, lime juice, salt, and pepper until smooth.
  2. Cut chicken into bite-sized chunks and add to the marinade, ensuring all pieces are coated. Cover and refrigerate for 30 minutes to 4 hours.
  3. Thread marinated chicken onto soaked wooden skewers, leaving space between pieces.
  4. Preheat grill to medium-high heat (200°C/400°F) and oil the grates.
  5. Grill skewers for 4-5 minutes on each side until chicken reaches an internal temperature of 74°C (165°F).
  6. Remove skewers from grill, allow to rest for a minute, and squeeze fresh lime juice over before serving.
