Cooking Instructions
- Preheat a large griddle or skillet over medium-high heat for about 3–5 minutes. Add 1 tablespoon of avocado or olive oil.
- Add the thinly sliced Yukon Gold potatoes to the heated oil, season with garlic powder, onion powder, smoked paprika, salt, and black pepper. Sauté for 10–12 minutes until golden brown and tender.
- Push the potatoes to one side, add another tablespoon of oil, and cook the sliced smoked sausage for about 5 minutes until browned.
- Add the sliced zucchini, onion, and red bell pepper to the skillet. Stir together and cook for an additional 5–7 minutes until tender yet slightly crisp.
- Taste and adjust seasoning as needed. Serve hot and optionally garnish with freshly chopped parsley.
