Step-by-Step Instructions
  1. Cut chicken into bite-sized pieces. Mince garlic and ginger.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and season. Sear for 5-7 minutes until golden.
  3. In the same skillet, sauté garlic and ginger. Add curry powder and turmeric. Stir for one minute.
  4. Pour in coconut milk, soy sauce, brown sugar, and lime juice. Simmer for 3-4 minutes.
  5. Return the chicken to the skillet, cook for 5-7 minutes until heated through.
  6. Stir in chopped basil leaves and adjust seasoning if necessary. Simmer for another minute.
  7. Serve over jasmine rice or with grilled naan.
