  • 2 tbsp Maple Syrup or Brown Sugar or Coconut Sugar
  • 2 tbsp Coconut Aminos or Tamari or Soy Sauce
  • 1 tbsp Rice Vinegar can substitute with apple cider vinegar
  • 1 tbsp Toasted Sesame Oil or regular sesame oil if unavailable
  • 1/2 tsp Red Pepper Flakes optional
  • 1 tbsp Arrowroot Powder or Cornstarch
For the Filling
  • 1 tbsp Olive Oil or Avocado Oil
  • 1 lb Ground Beef can substitute with ground pork or plant-based meat
  • 2 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated
  • 1 medium Red Bell Pepper finely diced
  • 1 cup Shredded Carrots
  • 2 stalks Green Onions sliced
  • to taste Kosher Salt
  • to taste Ground Pepper
For the Wrap
  • 1 head Boston Bibb Lettuce or Butter Lettuce
  • 2 tbsp Sesame Seeds for garnish

  • 1 cup Steamed White Rice or Cauliflower Rice

Method
 

Step-by-Step Instructions
  1. In a mixing cup, combine maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and optional red pepper flakes. Whisk until well mixed, then gradually incorporate the arrowroot powder, stirring continuously until smooth.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and break it apart as it cooks. Stir until browned, about 5 minutes.
  3. Stir in minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.
  4. Add diced red bell pepper and shredded carrots. Sauté for 3-4 minutes until vegetables have softened.
  5. Pour the prepared sauce over the beef and vegetable mixture, stir, reduce heat to medium, and simmer for 2-3 minutes.
  6. Remove from heat, stir in sliced green onions, and spoon generous amounts of filling into lettuce leaves. Garnish with sesame seeds if desired.
