Marinating and Cooking
  1. In a large mixing bowl, combine chicken thighs with olive oil, lemon juice, minced garlic, and spices. Mix thoroughly, cover with plastic wrap, and marinate for at least 1 hour in the refrigerator.
  2. Prepare the garlic sauce by combining Greek yogurt, additional minced garlic, lemon juice, and salt in a separate bowl. Stir until smooth and let chill in the refrigerator for at least 30 minutes.
  3. Preheat the grill to medium-high heat, approximately 15 minutes before cooking.
  4. Grill marinated chicken for about 8-10 minutes per side until cooked through and juices run clear.
  5. Rest the grilled chicken for about 5 minutes before slicing thinly against the grain.
  6. On a large platter, arrange sliced chicken, fresh vegetables, and warm pita bread or wraps. Serve with garlic sauce for everyone to create their own wraps.
