Preparation Steps
- Preheat your oven to 375°F (190°C).
- In a 9x13 inch baking dish, evenly spread uncooked long grain white rice across the bottom.
- Pour chicken broth over the rice without stirring.
- In a mixing bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, paprika, salt, and black pepper.
- Pat the chicken breasts dry, then drizzle with olive oil.
- Place the seasoned chicken breasts on top of the rice.
- Cover each piece of chicken with the tzatziki sauce.
- Cover the baking dish with aluminum foil and bake for 50-60 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
- Let the dish rest for 5 minutes before uncovering.
