- In a food processor, combine the drained chickpeas, diced red onion, garlic, nutritional yeast, soy sauce, and tomato paste. Pulse until smooth.
- Incorporate the smoked paprika, coriander powder, and cumin into the mixture. Pulse for another 15 seconds.
- Transfer the spiced chickpea mixture into a bowl. Stir in the breadcrumbs and chopped parsley until well combined.
- Scoop tablespoon-sized portions of the mixture, roll them into balls, and place them on a parchment-lined baking tray.
