Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C) to ensure it's hot and ready for baking.
  2. In a food processor, combine the drained chickpeas, diced red onion, garlic, nutritional yeast, soy sauce, and tomato paste. Pulse until smooth.
  3. Incorporate the smoked paprika, coriander powder, and cumin into the mixture. Pulse for another 15 seconds.
  4. Transfer the spiced chickpea mixture into a bowl. Stir in the breadcrumbs and chopped parsley until well combined.
  5. Scoop tablespoon-sized portions of the mixture, roll them into balls, and place them on a parchment-lined baking tray.
  6. Chill the meatballs in the freezer for about 15 minutes.
  7. Lightly brush each meatball with olive oil, place them in the oven and bake for 20 minutes, flipping halfway through.
