Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or ground lamb/chicken/turkey
  • 4 cloves Garlic minced
  • 1 Onion finely chopped
  • 1 cup Breadcrumbs gluten-free if desired
  • 1 tsp Baking Soda
  • 2 tbsp Fresh Herbs (Parsley, Mint, Coriander) chopped
  • 2 tbsp Olive Oil or neutral oil
  • to taste Salt
  • to taste Black Pepper
For the Sides
  • 4 medium Potatoes cut into wedges
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Oregano
For the Tzatziki
  • 1 cup Greek Yogurt or dairy-free yogurt
  • 1 small Cucumber grated and squeezed
  • 2 tbsp Lemon Juice or vinegar
  • 1 tbsp Fresh Dill or Mint chopped
For the Salad
  • 2 cups Lettuce as a base
  • 1 cup Tomatoes diced
  • 1 cup Cucumbers sliced
  • ½ medium Red Onion sliced
  • ½ cup Kalamata Olives
  • to taste Extra Olive Oil for dressing
  • to taste Lemon Juice for dressing

Method
 

Prepare the Meatballs
  1. In a large mixing bowl, combine ground beef, minced garlic, finely chopped onion, breadcrumbs, baking soda, chopped fresh herbs, olive oil, salt, and pepper. Mix thoroughly until well combined, then refrigerate for 2 hours.
Preheat and Form Meatballs
  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and form the chilled mixture into golf ball-sized meatballs, placing them on the sheet with space in between.
Bake the Meatballs
  1. Bake the meatballs for 30 to 40 minutes until browned and cooked through, reaching an internal temperature of 160°F (70°C).
Roast the Potatoes
  1. Cut potatoes into wedges, drizzle with olive oil, and season with salt, pepper, cumin, paprika, and oregano. Roast on a separate baking sheet for 40 to 60 minutes, turning halfway through.
Make the Tzatziki Sauce
  1. In a medium bowl, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, dill or mint, and salt. Stir until combined and refrigerate while everything else cooks.
Assemble the Greek Meatball Bowl
  1. In serving bowls, layer fresh lettuce, salad ingredients (tomatoes, cucumbers, red onion, olives), roasted potatoes, and meatballs, finishing with a dollop of tzatziki.
