Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40-45 minutes.
  3. Heat olive oil in a skillet over medium heat. Add diced onions and sauté for about 5 minutes until translucent.
  4. Add ground beef to the skillet, breaking it apart with a wooden spoon. Sprinkle in taco seasoning and cook for about 7-10 minutes until browned.
  5. Layer the roasted sweet potatoes first, then the seasoned ground beef mixture in bowls. Top with avocado slices and cottage cheese.
  6. Drizzle with hot honey and sprinkle with cilantro or red pepper flakes before serving.
