Preparation Steps
- Preheat your oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 40-45 minutes.
- Heat olive oil in a skillet over medium heat. Add diced onions and sauté for about 5 minutes until translucent.
- Add ground beef to the skillet, breaking it apart with a wooden spoon. Sprinkle in taco seasoning and cook for about 7-10 minutes until browned.
- Layer the roasted sweet potatoes first, then the seasoned ground beef mixture in bowls. Top with avocado slices and cottage cheese.
- Drizzle with hot honey and sprinkle with cilantro or red pepper flakes before serving.
