Ingredients

For the Base
  • 1 medium Onion Adds sweet and savory flavor; substitute shallots for a milder taste.
  • 1 medium Green Bell Pepper Provides crunch and color; red or yellow bell pepper can be used for added sweetness.
  • 3 cloves Garlic Offers aromatic flavor; garlic powder can be used in a pinch—1/4 teaspoon per clove.
  • 1 cup Brown Lentils Main protein source, with earthy flavor; ensure they are rinsed and checked for stones.
  • 1 cup Brown Rice Adds texture and fiber; white rice can be substituted but will require adjusted cooking times.
  • 4 cups Vegetable Broth Provides moisture and depth of flavor; use homemade or low-sodium for healthier options.
  • 1 can Diced Tomatoes Canned, undrained, adds acidity and moisture; fresh chopped tomatoes can substitute, increasing cooking time.
  • 1 can Diced Green Chiles Canned, undrained, contributes mild heat and flavor; fresh green chiles can be used for a spicier kick.
For the Seasoning
  • 2 tablespoons Taco Seasoning Blend Adds a mix of warming spices; homemade blend can be adjusted based on personal preference.
  • 1 teaspoon Mexican Oregano Enhances the dish’s flavor profile; regular oregano can replace it for a different nuance.
  • 1/2 teaspoon Thyme Provides a subtle earthiness; dried thyme is preferred, but fresh can be used if available.
  • 1 teaspoon Salt Essential for seasoning; adjust to taste.
  • 1/2 teaspoon Black Pepper Essential for seasoning; adjust to taste.
For the Topping
  • 2 cups Cheese Monterey Jack, Pepperjack, or White Cheddar; use vegan cheese for a dairy-free alternative.
  • 1/4 cup Cilantro Fresh garnish that complements the dish's flavor; omit if not a fan or substitute with parsley.
