- In your deep baking dish, combine the onion, green bell pepper, garlic, rinsed brown lentils, brown rice, vegetable broth, diced tomatoes, and diced green chiles. Add the taco seasoning, Mexican oregano, thyme, salt, and black pepper, and mix well.
Baking
- Cover the baking dish tightly with aluminum foil and bake for 1.5 hours.
- Halfway through, stir the mixture to ensure even cooking.
- After 1.5 hours, stir in half of the cheese, then spread the remaining cheese on top and bake uncovered for an additional 20 minutes.
Finishing Touches
- Once the cheese is melted and bubbly, let the bake cool for about 10 minutes before serving.
- Garnish with freshly chopped cilantro before serving.
