  • 12 oz Spaghetti Whole wheat or gluten-free can be used.
For the Sauce
  • 1 cup Sun-Dried Tomatoes Can substitute with roasted red peppers or fresh tomatoes.
  • 1 cup Heavy Cream Use half-and-half or plant-based cream for a lighter version.
  • 4 cups Fresh Spinach Kale or Swiss chard can be used as alternatives.
  • 2 tbsp Olive Oil
  • 1 medium Onion Can substitute shallots for a milder taste.
  • 2 cloves Garlic Fresh garlic is preferred.
  • 0.5 cup Parmesan Cheese Nutritional yeast can be used as a vegan substitute.
  • to taste Salt & Pepper Adjust according to personal preference.
  • to taste Red Pepper Flakes Omit if you prefer a milder dish.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook for 8-10 minutes until al dente. Reserve ½ cup of pasta water and drain spaghetti.
  2. In a skillet, heat olive oil over medium heat, add onion and sauté for 4-5 minutes. Stir in garlic and sun-dried tomatoes, cooking for 1-2 minutes more.
  3. Lower heat and whisk in heavy cream, simmer for 3-4 minutes until thickened.
  4. Add grated Parmesan cheese and stir until melted, seasoning with salt, pepper, and red pepper flakes to taste.
  5. Add spinach and stir until wilted, around 2-3 minutes.
  6. Mix in cooked spaghetti, adding reserved pasta water to reach desired consistency.
  7. Serve with extra Parmesan cheese and fresh herbs if desired.
