- Bring a large pot of salted water to a boil. Add spaghetti and cook for 8-10 minutes until al dente. Reserve ½ cup of pasta water and drain spaghetti.
- In a skillet, heat olive oil over medium heat, add onion and sauté for 4-5 minutes. Stir in garlic and sun-dried tomatoes, cooking for 1-2 minutes more.
- Lower heat and whisk in heavy cream, simmer for 3-4 minutes until thickened.
- Add grated Parmesan cheese and stir until melted, seasoning with salt, pepper, and red pepper flakes to taste.
- Add spinach and stir until wilted, around 2-3 minutes.
- Mix in cooked spaghetti, adding reserved pasta water to reach desired consistency.
- Serve with extra Parmesan cheese and fresh herbs if desired.
