  • 2 cups Fresh Strawberries Slice and reserve for garnish.
Whipped Cream
  • 1 cup Heavy Cream Use vegan alternatives if preferred.
  • 1 cup Mascarpone Can be omitted for lighter texture.
  • 1/2 cup Powdered Sugar Granulated sugar can be substituted.
  • 1 teaspoon Vanilla Extract Optional if not flavored.

Method
 

Preparation
  1. Rinse 2 cups of fresh strawberries under cold water and slice them evenly. Set aside half for layering.
  2. Line an 11x6 inch loaf pan with aluminum foil or cling film.
  3. In a mixing bowl, combine 1 cup of heavy cream, 1 cup of mascarpone, 1/2 cup powdered sugar, and 1 teaspoon vanilla. Whip until fluffy.
  4. Spread 1/4 of the whipped cream in the pan, layer graham crackers, and top with 1/3 of the sliced strawberries.
  5. Repeat layering process until all ingredients are used, finishing with whipped cream on top.
  6. Cover with plastic wrap and refrigerate for at least 4 hours.
  7. Lift the cake out of the pan, garnish, slice, and serve chilled.
