  1. Begin by dicing about 2 cups of grilled or roasted chicken into bite-sized pieces. If using rotisserie chicken, shred it into chunks.
  2. Dice 1 large cucumber into small pieces and finely chop ½ cup of red onion.
  3. In a large mixing bowl, combine the diced chicken, cucumber, onion, and 1 cup of sweet corn. Stir in ½ cup of mayonnaise and 2 tablespoons of Greek yogurt.
  4. Add 1 tablespoon of lime juice, 1 tablespoon of chopped cilantro, 1 teaspoon of smoked paprika, 1 teaspoon of salt, and ½ teaspoon of black pepper. Fold everything together until well mixed.
