  • 2 cups Frozen Corn Thawed and dried.

  • 1 cup Mayonnaise Can substitute with Greek yogurt.
  • 1/2 cup Full-fat Sour Cream Adds richness.
  • 2 tablespoons Fresh Lime Juice For brightness.
For the Flavor
  • 1/2 cup Cotija Cheese Can substitute with feta.
  • 1 whole Fresh Jalapeno Diced and seeded.
  • 1/4 cup Fresh Cilantro Can substitute with green onions.
  • 1 teaspoon Chili Powder Adjust to taste.
  • 1 teaspoon Garlic Powder For savory flavor.
  • 1 teaspoon Kosher Salt To taste.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Cook rotini or fusilli pasta for 8–10 minutes until al dente. Drain and rinse under cold water.
  2. Heat a cast iron skillet over medium-high heat. Add a splash of olive oil and char thawed corn for about 4 minutes. Toss and cook for an additional 2 minutes.
  3. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, and kosher salt. Whisk until smooth.
  4. In a large bowl, combine cooled pasta, charred corn, jalapeno, cilantro, and cotija cheese. Pour dressing over and gently fold ingredients together.
  5. Cover bowl and refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes
