Step-by-Step Instructions
- Bring a large pot of salted water to a boil. Cook rotini or fusilli pasta for 8–10 minutes until al dente. Drain and rinse under cold water.
- Heat a cast iron skillet over medium-high heat. Add a splash of olive oil and char thawed corn for about 4 minutes. Toss and cook for an additional 2 minutes.
- In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, and kosher salt. Whisk until smooth.
- In a large bowl, combine cooled pasta, charred corn, jalapeno, cilantro, and cotija cheese. Pour dressing over and gently fold ingredients together.
- Cover bowl and refrigerate for at least 1 hour before serving to allow flavors to meld.

For meal prep, salad can be stored in an airtight container for up to 4 days. Freezing without dressing is also possible for up to a month.
