  • 2 tablespoons Rice Vinegar apple cider vinegar can substitute
  • 1 tablespoon Sesame Oil olive oil is an option but use less
  • 2 cloves Minced Garlic fresh is best
  • 1 teaspoon Grated Ginger jarred ginger is a quick substitute
Wrap Ingredients
  • 2 cups Cooked Chicken swap with tofu or chickpeas for vegetarian
  • 4-6 leaves Large Lettuce Leaves (Romaine or Butter) try collard greens for sturdier option
  • 1 cup Shredded Carrots julienned cucumbers can work too
  • 1 cup Sliced Bell Peppers mix and match colors or use other veggies
  • 0.5 cup Chopped Fresh Cilantro omit if not a fan
  • 0.5 cup Chopped Peanuts optional for extra crunch

Method
 

Instructions
  1. In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth and combined, about 2-3 minutes.
  2. In a large bowl, combine shredded cooked chicken with half of the prepared peanut sauce and mix thoroughly.
  3. Lay out large lettuce leaves and evenly distribute the chicken mixture down the center of each leaf.
  4. Top the chicken mixture with shredded carrots, sliced bell peppers, and chopped cilantro to taste.
  5. Carefully fold the sides of the lettuce leaves in, then roll them tightly to create the wraps.
  6. Serve the wraps seam-side down with extra peanut sauce on the side for dipping.
