- In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth and combined, about 2-3 minutes.
- In a large bowl, combine shredded cooked chicken with half of the prepared peanut sauce and mix thoroughly.
- Lay out large lettuce leaves and evenly distribute the chicken mixture down the center of each leaf.
- Top the chicken mixture with shredded carrots, sliced bell peppers, and chopped cilantro to taste.
- Carefully fold the sides of the lettuce leaves in, then roll them tightly to create the wraps.
- Serve the wraps seam-side down with extra peanut sauce on the side for dipping.
