- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 small finely diced onion and sauté for about 3-4 minutes until the onion turns translucent.
- Stir in 3 minced garlic cloves. Sauté for an additional 1-2 minutes until fragrant and slightly golden.
- In a bowl, whisk together 1/4 cup of soy sauce or tamari, 1/4 cup of maple syrup, 1 tablespoon of rice vinegar, and 1 tablespoon of toasted sesame oil. Pour this into the skillet.
- Combine 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Pour it into the skillet, stirring until the sauce thickens.
- Add 2 cups of cooked chickpeas to the skillet and toss gently to coat them in the sauce. Cook for 5-7 minutes.
- Once heated, sprinkle in 1 tablespoon of sesame seeds and 2 sliced green onions, stirring together.
- Serve the Vegan Sticky Sesame Chickpeas over cooked rice or quinoa and alongside your choice of vegetables.
