Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare your baking dish by lining it with baking paper.
  2. Grate the zucchini and carrot, sprinkle with salt, and let sit for 10 minutes in a colander to remove excess moisture.
  3. In a frying pan, heat olive oil, add diced onion and bacon, and cook until crispy and golden.
  4. Combine squeezed zucchini and carrot with cooked onion, bacon, chopped red capsicum, grated cheese, and flour in a mixing bowl.
  5. Add eggs, milk, remaining olive oil, salt, and pepper to the mixture; stir until well combined.
  6. Pour the mixture into the prepared baking dish, smooth the top, and optionally sprinkle with additional cheese.
  7. Bake in the preheated oven for 35-40 minutes or until the top is golden and a toothpick comes out clean.
  8. Let cool for a few minutes, slice into squares, and serve warm or cold.
