Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather ingredients and equipment.
  2. Toss shredded zucchini with a pinch of salt and let it rest for 10 minutes.
  3. Drain the zucchini using a kitchen towel, squeezing out as much liquid as possible.
  4. Mix in the eggs, grated Parmesan cheese, and 1 cup of shredded mozzarella cheese.
  5. Lightly grease a 9x13 inch baking dish and spread the zucchini mixture to form a crust.
  6. Bake for 20 minutes until set and light golden brown.
  7. In a skillet over medium heat, cook ground beef and chopped onions until browned and translucent.
  8. Stir in pizza sauce, bell pepper, sliced mushrooms, oregano, garlic powder, and black pepper. Let simmer for 5 minutes.
  9. Spread beef and veggie mixture evenly over the crust.
  10. Sprinkle remaining mozzarella and cheddar cheese over the beef mixture.
  11. Bake for another 20 minutes until cheese is melted and bubbly.
