Ingredients
  

For the Crust
  • 4 cups Shredded Zucchini Salt and drain to prevent sogginess.
  • 1 teaspoon Salt Used to draw out moisture.
  • 2 large Eggs Bind the crust together.
  • 1 cup Grated Parmesan Cheese
For the Filling
  • 1 pound Ground Beef Can substitute with turkey or plant-based meat.
  • 1 medium Chopped Onion
  • 1 cup Pizza Sauce
  • 1 cup Chopped Green Bell Pepper
  • 1 cup Sliced Mushrooms
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper
For the Topping
  • 2 cups Shredded Mozzarella Cheese
  • 1 cup Shredded Cheddar Cheese

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss shredded zucchini with salt in a bowl and let it rest for about 10 minutes.
  3. Squeeze out the moisture from the zucchini using a clean kitchen towel.
  4. Combine the drained zucchini with eggs, Parmesan cheese, and half of the mozzarella. Stir until mixed.
  5. Press the mixture evenly into a greased 9x13-inch baking dish.
  6. Bake the crust for 20 minutes until golden brown.
Assembling
  1. In a skillet, sauté ground beef and chopped onion until browned. Stir in pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper, and simmer for 5 minutes.
  2. Spread the beef mixture evenly over the baked crust.
  3. Sprinkle with remaining mozzarella and cheddar cheese.
  4. Bake for another 20 minutes until cheese is bubbly and golden.
  5. Allow to cool for a few minutes before slicing and serving.
